Sweet Potato and Mixed Seeds Damper
Equipment
- 1 Microwave Oven
- 1 Baling Tray
- 1 Bowl
- 1 Butter knife
- 1 Spatula
Ingredients
- 1/3 cup pepita and sunflower seed mix
- 2 tbsp sesame seeds
- 1 tbsp poppy seeds
- 2 cup Flour, Some Extra flour for Dusting
- 1/4 cup LSA (see note)
- 1 tbsp Salt
- 60 gm Chilled Butter, Chopped
- 1 cup Mashed Orange Sweet Potato
- 3/4 cup Milk, Plus Extra For Brushing
- 150 gm Softened Butter, Extra to Serve
Instructions
- Preheat oven to 200C/220C. You need to the lightly dust a baking tray with little flour.
- Now, combine seed mix, sesame seed and poppy seeds in a bowl.
- Add flour, LSA, and salt in a large bowl. Using a spatula stir the butter into flour until it resembles fine crumbs. Stir 2tbsp of seed mixture on it. Add sweet potato and milk. Using a butter knife, mix it well until it forms soft dough.
- Turn out the dough on a lightly floured surface. Make it smooth. Shape it into an 18 cm round and place it on the prepared baking tray.
