Sweet Potato and Mixed Seeds Damper

Sweet potato and mixed seeds damper is a delicious recipe of traditional Australian  bread damper. The sweetness of potato and nuttiness crunch of mixed seeds like sesame, pumpkin and sunflower seeds makes it different in taste.

  • 1/3 cup pepita and sunflower seed mix
  • 2 tbsp sesame seeds
  • 1 tbsp poppy seeds
  • 2 cup Flour, Some Extra flour for Dusting
  • 1/4 cup LSA (see note)
  • 1 tbsp Salt
  • 60 gm Chilled Butter, Chopped
  • 1 cup Mashed Orange Sweet Potato
  • 3/4 cup Milk, Plus Extra For Brushing
  • 150 gm Softened Butter, Extra to Serve
  1. Preheat oven to 200C/220C. You need to the lightly dust a baking tray with little flour.
  2. Now, combine seed mix, sesame seed and poppy seeds in a bowl.
  3. Add flour, LSA, and salt in a large bowl. Using a spatula stir the butter into flour until it resembles fine crumbs. Stir 2tbsp of seed mixture on it. Add sweet potato and milk. Using a butter knife, mix it well until it forms soft dough.
  4. Turn out the dough on a lightly floured surface. Make it smooth. Shape it into an 18 cm round and place it on the prepared baking tray.
  5. Brush the top with some milk and sprinkle the remaining seeds – season with salt and pepper. With the use of a knife, cut the dough into 8 pieces. Bake it for 30 minutes until golden. Stand for 5 minutes on the tray. Serve with softened butter.

LSA is a mixture of ground linseeds, almonds, and sunflower seeds. Be careful while taking out the baking tray from the oven. Keep the stove safe from children.
